In 1997, Michel Chapoutier’s pioneering spirit drove him to to explore the varied terrior of Australia. Domaine Tournon is located in the undulating Pyrenees Hills of Victoria famed for its red ferruginous shales covering clay and podzolic soils. The grapes are destemmed and then gently pressed, cold sedimentation then takes place for 48 hours and alcoholic fermentation is completed in stainless steel tank. The wine is entirely aged in stainless steel tank on lees for 5 months.
Pale gold with a nose, full of fresh crisp and fruity stone fruits. The palate exhibits great minerality and fruit weight, with a full and crisp finish. There are a plethora of potential food pairings for this wine, including; light seafood dishes with scallops and prawns fuller flavored fish dishes, roast poultry, pork, stir fry and sharp cheeses
