A very high quality and unique red wine made using traditional methods which is quite simply exquisite. We noted this in our tasting book as outstanding, and when we learned about the producers and their old style wine making techniques, we were smitten.
On its own or with lamb, venison, game, well seasoned red meats or mature cheeses. Also matches well with most barbeque dishes.
Cave Dumien-Serrette is located in the commune of Cornas in the Ardeche region. Only wines produced in the village of Cornas are entitled to use the ‘AOC Cornas’. The Domaine has been a family business for 400 years. Most of the wine they produce is sold at the cellar door, but a small amount is sent for export to the US, UK and Japan.
The grapes are picked by hand and destalked before being trodden by foot in concrete vats and turned over each evening. The first fermentation takes from 8 to 10 days, after which the fermented must and skins are transferred to a press. The pressed must is then transferred to oak barrels for a 2nd malolactic fermentation. The wine is then decanted between barrels twice to remove any sediment (rather than using a fining agent) and is then matured for between 18 months and 2 years in oak barrels.
